Total Alcoholic Strength: 12,5%
Acidity: 5,6 GR/L
Vinification: Harvested during the last week of September. We pick up the grapes and put them in little cases gently pressed. After the addiction of selectioned leavens we start the fermentation at the controlled temperature of 24°. When the fermentation is not yet ended, the wine is drawed from the vats to avoid the passage of too many polyphenols from the peel and seeds to the wine.

Maturation: The wine produced in this way is refined in steel barrels for 4 months until bottling.
Features: Color: light red with cherry reflex; Scent: delicate, with flavour of flour pepper; Taste: dry - gentle and lightly tannic.
Ageing: 3 years since the vintage.
Combining: White meats - cold cuts - fat fish (salmon - eel)
Temperature: in summer 12° - 14° / in winter 16° - 18°
